Slow Cooker Pork Chops

I know I have been professing my love for my crock pot lately like a teenage girl does her first boyfriend, but I can not help myself. This thing is amazing!  I mean really, the weekend was so busy that I didn't have time to stand in front of the stove for 30 minutes preparing dinner at the end of a long day, so I tossed in my ingredients and went about my fun. When I came back to it, dinner was cooked!?!?

I am not sure why I resisted my slow cooker for so long. But, honestly, it is about as good as having a private chef.  LOL. I even tossed together these beauties (crock pot candy) that everyone is going nuts over, last week, and can't wait to make more.

These Crockpot Pork Chops are that easy. Seriously you will toss the ingredients into the slow cooker and come back to it hours later to find perfectly tender, melt in your mouth pork cooked in the most spectacular sauce.  It is a little sweet, a little spicy, a little barbeque-y (yes I made that word up) and a lot delicious.

I made a quick chicken flavored rice side dish and broccoli, to serve with this pork and let me just tell you that the sauce served over the rice and broccoli. OH MY GOODNESS! AH-MAZING. Good enough to drink with a straw. Well.... Maybe not. But pretty darn close.

Helpful Tips to make Crock Pot Pork Chops:

  • Use thick cut pork chops (1"- 1 1/2"), this is essential. Thinner pork chops cook much faster and you will not have the same results.
  • Add chili paste according to your desired heat level. We used 3 tablespoons as we like a little kick. If you prefer it more mild add less, or omit it altogether. It is fabulous either way.
  • Cook times will vary based on your slow cooker and the thickness of your pork chops.

What you will need to make Crock Pot Pork Chops:

  • A Slow Cooker - I like mine that is programmable so it’ll only run as long as I want it to then it turns to warm, so food doesn't get overcooked.
  • Garlic Press - One of my most used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!

Crockpot Pork Chops

Crockpot Pork Chops are the easiest slow cooker recipe ever. Toss and go. Toss it all in the crockpot and you return to perfectly tender, melt in your mouth pork cooked in the most spectacular sauce. It is a little sweet, a little spicy, a little barbequey (yes I made that word up) and a lot delicious. Prepped in just 5 minutes.
prep time: 5 MINScook time: 5 hourtotal time: 5 hours and 5 mins

Ingredients

  • 1/2 cup light brown sugar, packed
  • 1/2 cup ketchup
  • 1/4 cup low sodium soy sauce
  • 1-3 tablespoon red chile paste (I used Gourmet Garden)
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 3-5 pounds boneless pork chops (thick cut 1"- 1 1/2")
  • 1/4 cup cornstarch

Instructions

  1. Add ingredients (except pork chops and corn starch)  in a 6-quart slow cooker.  Stir to combine. Add pork chops. Toss to coat with the sauce. Cook on low 4 hours.
  2. After 4 hours, combine equal amounts cornstarch and water in a mason jar. Close the lid, to seal the jar. Shake the living tar out of it, to create a slurry. Add the slurry to the crockpot. Stir and cover, cook 1 more hour. 
  3. Check for doneness. If the pork chops need longer let them cook until tender and done.
  4. Serve and enjoy!
DONNA'S NOTES
  1. Add chili paste according to your desired heat level. We used 3 tablespoons as we like a little kick. If you prefer it more mild add less, or omit it altogether. It is fabulous either way.
  2. Cook times will vary based on your slow cooker and the thickness of your pork chops.
  3. *Cook time has been changed from 7 hours total. After further testing in different slow cookers we found the best results come in about 5 hours total.
