The easiest way to cook soup is in the slow cooker. Toss in all the ingredients in and eight hours later you're walking in the door to a wonderful smelling hot soup that will warm you up from the inside out. Push the canned soup away and bring out your slow cooker for this delicious Slow Cooker Taco Soup!

I love winter! Just kidding! But I do love the comforting warm foods I eat during the cold winter months. Soup is one of my favorite things to make during the fall and winter to warm me back up. Of course I love the thick and creamy ones like Creamy Chicken Noodle Soup but I also love broth soups packed with beans and veggies like this Slow Cooker Taco Soup. Even my little kids love it!

All you have to do for this soup is chop up some onions (though I just discovered that you can buy frozen chopped onions. Mind blowing!), take 5 minutes to brown the meat, and then open a few cans. This is definitely a fool proof recipe. In fact, you might want to think about enlisting  your teenager to make it.

HELPFUL TIPS TO MAKE SLOW COOKER TACO SOUP:

  • Be sure to drain and rinse the beans. This will help reduce the gas producing starches as well as sodium. If you want to thin your soup, just add more beef broth.
  • Brown the ground beef before adding it to the slow cooker. This prevents the meat from clumping together and lets you drain off the grease.
  • For more of a southwest flavor I use fire roasted corn and fire roasted tomatoes.

WHAT YOU WILL NEED TO MAKE SLOW COOKER TACO SOUP:

  • Slow Cooker  -Great for soups, roasts, shredded chicken ... I love it in the fall/winter but it's also great in the summer when you don't want to heat up the whole house with the oven.

  • Non-stick Skillet- Everyone needs a good skillet. I use this almost daily for everything from cooking eggs to browning chicken or ground beef.

Slow Cooker Taco Soup

Slow Cooker Taco Soup is a quick and easy dinner recipe with all your favorite Mexican flavors that takes just ten minutes to prep!

Ingredients

For the Soup:
  • 1 pound lean ground beef
  • 1 1/2 cups fire roasted corn, canned or frozen
  • 1 medium white onion, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (7-ounce) can green chilies
  • 1 (14.5-ounce) can fire roasted diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 2 cups beef stock
  • 1 package taco seasoning (2 tablespoons)
For the toppings:
  • Avocado
  • Cheese
  • Cilantro
  • Sour Cream
  • Tortilla chips

Instructions

  1. Brown the beef in a medium skillet over medium-high heat. Drain off the fat, and transfer to the slow cooker.
  2. Add the remaining soup ingredients, stir together, and cook on low for 6-8 hours (or 3-4 hours on high) until onions and beef are tender.
  3. Ladle into bowls and top with cheese, sour cream, avocado, cilantro, and tortilla chips.
